Camellia sinensis

Traditionally dried in kettles over fire in the Yunnan province of China. After this wilting process the tea leaves are rolled and fermented with a kiss of the sun. This fermentation and oxidation give the tea leaves the most alluring flavor....tea accented with smoke rising through mossy woods.
